My first impression about Finland by Clément Foucaud
“I work in a Santa Claus Hotel in Rovaniemi, it’s a big one like where I work in France. It looks like a same organization, big preparation, lots of cooks and waiters… But in France, every time we run, we try to work more and more quickly, here it’s different. Sometimes, during the service when we have nothing to do, we wait the customers finish and after that we start to clean or something, in France we can’t do that. We should to clean something (material, dishes…) every time – we should be busy.
About the ingredients. In France we work with more fresh ingredients, because it’s so easy to have. Here we discover new ingredients like reindeer, bear, bread cheese, cloudberry (lakka), and different things to use as an ingredient like blackberry salmon. That’s really interesting.
People we can meet are really friendly, amazing, funny…That’s great! In first time I thinking all are like that, every time with everyone. But after speaking with local people, they say they are like French people, shy… But with us they are really great, they help us all the time, speaking, meeting, going in bar or shop or in club or a coffee shop. We have a really good time with all the people we have met.
Finland is a nice place. It´s more cold than in France, but no snow in this time – I need snow.”

For sure there is a one country in the world where Santa has never had a letter, it`s North Korea
Père Noël is everywhere, but the right address is Lapland, Finland 😉
